The traditional method or champenoise
If there is anything that differentiates our sparkling wines from most sparkling wines, it is in the method of production. The years and technological advances have allowed to improve the processes, but what has remained unchanged is the essence of the care of the vineyard and quality viticulture in addition to the so-called traditional method, which provides the sparkling its main characteristics and one of the secrets of its excellence.
Also called champenoise - due to its French origin - the traditional method is distinguished by performing the second fermentation in a bottle, unlike most sparkling wines in the world that use other methods.
The winery Vega Tolosa, located in Casas Ibáñez (Albacete) within the D.O. Manchuela, stands out for its quality sparkling wines produced under the traditional method or champenoise. Our sparkling wines include award-winning wines, which use both international varieties such as the Chardonnay grape, native varieties such as bobal and as native varieties recovered the Tardana.
