A collection that is born from a specific place surrounded by pine forests, where we show that the D.O. Manchuela is an exceptional territory for large whites and reds.
Here we dare to innovate, acclimating varieties such as Viognier or the Sauvignon Blanc to our Manchego sun to create gastronomic, unctuous and complex wines.
They are wines that smell of low mountain, flowers and freedom.
VINEYARDS:
The vineyard is located in a SPA area (Special Protection Area for Birds), surrounded by Mediterranean forest. The pines protect the vines from the winds and create a microclimate that favors a slow and balanced maturation.
VARIETIES:
We are pioneers in the adaptation of grapes Viognier in our area, achieving a unique floral expression. The collection is completed with Chardonnay, Sauvignon Blanc and one Garnacha Tintorera of character.
DEVELOPMENT:
The key to Finca Los Halcones is the work on fine lees.
After fermentation, we keep the wine in contact with its own yeasts, performing periodic bâtonnage (removed). This provides volume, fat in the mouth and a silky texture that makes them perfect wines to pair.
In the case of Viognier, part of the wine ferments and breeds in French oak barrels to gain complexity.
