Between the Júcar Valley and the Cabriel Valley, is Finca Los Halcones. A viognier plantation is located that offers a delicious ripening a little late to gain greater complexity. The wine is made with 2 hectares of farm, of the remaining 15 hectares, to maintain its purity with a limited production of 3000 kilos per hectare. Fermentation and aging for 3 months in new barrels of 500 liters of French oak, with a subsequent aging for 9 months in a foudre of 2500 liters.
