The site of these vineyards has been dubbed ‘Finca Los Halcones’, a unique place surrounded by pines, oaks and aromatic plants, nestled in the Cabriel Valley declared a Biosphere Reserve by UNESCO. The decision to plant this variety is due to our unique terroir and the need to look for later ripening white grape varieties with powerful acidity. Fermentation and aging for 3 months in new barrels of 500 liters of French oak, with a subsequent aging for 9 months in a foudre of 2500 liters.
