  • The sparkling wines, mostly white, are those in which the carbon dioxide of the fermentation remains dissolved in the wine and turns into gas when opening the bottle forming a delicate foam.

The white wines of La Manchuela, of which more than 170 hectolitres are produced annually, are mainly made from grapes such as Macabeo. Almost three-quarters of all La Manchuela white wine is made from this type of grape. There are several universal truths about the taste of Maccabeus: wines can be fresh, floral and aromatic when harvested early enough and aged in stainless steel, but balanced, mellow and walnut when aged in oak barrels and harvested a little later.

From this type of grape, for example, young wine is produced.Hoya del Carmen» from the VegaTolosa winery. The wine has a distinctive and original touch by the composition of the terroir, old vineyards of more than 50 years. 

Maccabeus can be used alone, but is usually used in combination with other varieties: Malvasia, Garnacha Blanca, Parellada and Xarello. Macabeo is also used to make Cava, a traditional Spanish sparkling wine. Thus, the combination of Chardonnay, Macabeо and Sauvignon Blanc allowed to elaborate Brut Nature Chardonnay Ecological 2018, with the clean, fruity and long aroma, abundant detachment of fine bubbles, with crown formation.

How white wine is born: from processing to ageing

It is important to mention that all types of La Manchuela white wine are made with production methods compatible with respect for the environment. White wine is usually made by fermenting pure grape juice. For the production of white wines from La Manchuela, the process is carried out with special care so that nothing can spoil the fresh aroma of the product.

The maximum possible juice is extracted without crushing the solid elements to avoid bad tastes. The juice that comes out first is called tear must or flower, with low polyphenol content. Before bottling the wine, it must go through the maturation process – from several days to several months. The white wines of La Manchuela also ripen in bottles. Whatever option winemakers choose, subject to the necessary technologies, the resulting wine is a pleasant yellow to greenish, crystalline, aromatic, delicate.
