Wine made with the best selection of grapes from our Bobal vineyards. The wine was bred for 7 months in French oak barrels. A vineyard that we inherited from our grandparents and that they planted themselves. ## **Vineyard** Organic and vegan vineyards, located 750 meters above sea level between the Valleys of Júcar and Cabriel. Planted in the transition zone to the Biosphere Reserve by UNESCO. Ideal for growing natural and organic grapes. ## **Organic viticulture ** The Tolosa family has 250 hectares of organic vineyards of which 40 hectares are planted in Bobal, intended for our ‘Bobal Icon’ wine. Its cultivation is organic, certified by the European Standard (EU-REG (EC) 834/2007). No to chemical fertilizers (we make our own organic compost from mixing grape scrapes and sheep cattle manure). For the diseases produced by fungi we use copper and sulfur base, organic and natural products for the vine. Harmful insects are controlled by taking care of the beneficial insects found in the vine, we plant aromatic plants between the vineyard so that they can shelter and multiply. If we encounter some occasional plague of moths due to problems with neighbors, we use sexual pheromones to confuse males and prevent fertilization of females. ## !(https://vegatolosa.com/wp-content/uploads/2023/06/label-227x300.jpg) **Vegano Production ** Since 2019 all wines of the Tolosa Family are Vegan, this means that in the process of making Bobal Icon, its yeasts are not genetically modified, nor are oenological products of animal origin used. ## **Vendimia ** Bobal Icon grapes were harvested in mid-October, at the peak of ripening. Thanks to the climatic conditions throughout the year, the parameters of acidity, Ph and sugars; they were perfect for making a quality wine. The rest would be done in the cellar. ## **Development ** Reception in the winery with a thorough cleaning and selection of the grapes. The grapes are cooled and the deposits are filled by cold maceration to extract the aromas from the skin. The alcoholic fermentation begins at a controlled temperature (20ºC.) in stainless steel tanks, at the end of the alcoholic fermentation that will last about eighteen days, it is discovered separating the wine from the seeds and skins. We fill the French oak barrels for malolactic fermentation, after six months of emptying the barrels, the wine will be ready for clarification, filtering and bottling, following all hygiene and disinfection measures. ## **Label design ** Talking about the brand “Bobal Icon” is daring because although it means the bobal icon, a wine with a unique style; in our dictionary of the Royal Academy there is a word “bobalicon” with which we have actually registered our trademark, it is only a matter of making a small play on words to attract the attention of the consumer.
